Servings: 15 oz
6 oz dried chickpeas
water
-- Soak Method 1 --
+ Soak the chickpeas over night in water
-- Soak Method 2 --
+ Add chickpeas to a pot
+ Cover the chickpeas with three times as much water
+ Bring to a boil
+ Boil for 1-5 minutes
+ Cover and let rest for one hour
-- Rest of recipe --
+ Drain off the water
+ Put the peas in a pot and cover with water with 3 times as much water as peas
+ Bring to a boil
+ Reduce heat to low simmer for 45-60 minutes
+ Test it by taking one out, letting it cool a little and if you can gently bite into it
+ Drain the liquid and reserve some of it if you will be making hummus
! This works for hominy too
! Cuzco corn, posole corn, hominy, chickpeas or garbanzo beans
