2 cups whole milk
1 cup heavy cream
4 large egg yolks
2/3 cup sugar
2 ripe bananas, chilled
1 Tbsp sugar
1/2 Tbsp lemon juice
+ Combine mlik and cream in sauce pan
+ Slowly heat to 170f
+ In non-reactive bowl whisk egg yolks until smoth
+ Mix in the sugar until it is fully incorporated
+ Temper egg yolks with the heated cream mixture
+ Return to sauce pan
+ Heat at low heat and stir frequently until 185f
+ Run through a fine mesh strainer or cheese cloth into a bowl
+ Blend the last three items until smooth
+ Mix with base
+ Let cool to room temperature (ice bath recomended)
+ Let rest at leaset 4 hours
+ Put it in the machine
