2 cloves garlic, minced fine
1 Tbsp oregano
1/4+ cup vinegar
1/4-1/2 cup red chili powder (salt free)
2-3 Tbsp smoked paprika
1 lb ground pork
+ Put everything except pork in a large bowl
+ Whisk to mix well
+ Add the pork
+ Knead it until spice mixture is evenly blended through all the meat
+ Put meat into a metal colander
+ Shape it in a ring so that as water drains out that it can leave the colander
+ Place colander in the mixing bowl
+ Cover with a towel
+ Don't Panic
+ Leave at room temperature for about 24 hours
+ Refrigerate or freeze in serving size units
! Don't Panic. You will be leaving meat out at room temperature for a very long time but you have nothing to worry about. The mix of vinegar will chemically cook the meat like in a ceviche. Some say that the chili powder will stop spoiling. I don't know if I trust that but I have full faith in the power of vinegar.
