1 Anaheim pepper
6 tomatoes, chopped, seeded
1/4 tsp kosher salt
1 tsp lemon juice
+ Turn on a gas burner and grab your tongs
+ Using the tongs roast the pepper until it is blackened all around
+ Let cool for about 5 minutes
+ Remove the skin and seeds
+ Dice the pepper
+ Place the pepper, tomatoes, lemon juice and salt in a small pot
+ Bring to a boil while stirring
+ Reduce heat and simmer for 5 minutes
! You can can this in a water bath. Leave 1/2 an inch head space and process pints for 20 minute. If doing this skip the 5 minute simmer at the end of the recipe
