What else can you do with roast beef? You can take a standard pasta sauce[0] and thin slice maybe 3/4 pound of the roast beef and toss it in the sauce while it simmers. Pile the sauce on some freshly made and cooked semolina pasta cut into 1 inch strips.

[0] 28 oz can of tomatoes (crushed, pureed or sauce), 2-4 cloves minced garlic, 1 tbsp oregano, 1 tbsp basil, 1/4 cup olive oil, 1/4 tsp crushed red pepper, 1/2 tsp rosemary, 1/2 tsp salt. Bring the heat up to medium high and once it starts bubbling turn it down to a simmer for 3-120 minutes

pumpkin beers

Today I stopped by a local bottle shop and hit up their "last season's sale" section. Every bottle there was a pumpkin beer. A few years ago I took some out of date Terrapin pumpkin beer and made some beer jelly with pectin I made from a whole lot of saved and frozen apple peels and cores. I just happen to have a whole lot of frozen peels and cores right now. I think I shall drink some and sort out which ones will be the best for drinking and the best for jelly.

  • I was a bit dashy at the end so I didn't melt the cheese onto the steak mix before pilling it onto the buns. But over all nice and tasty and since the hoagie rolls were made from scratch they were fresh and not dry like normal. No mayo needed.

    Roast Beef

    This roast beef is the first large solid piece of meat I have cooked in many years. I don't normally cook 6 pounds of meat at once. When I do it is cut into chunks and stuffed into jars and saved for future meals. When you normally try to avoid eating more than a 1/4 lb of meat at any time 6 pounds is ideally 24 servings of meat. For two people that comes out to almost weeks worth of food if you eat it two times a day.

    I will turn the final piece into a few different things. There will be a straight forward roast beef meal, I will make some hoagie rolls and turn some of this into Philly Cheese Steaks, There will likely be a hash of some kind as well. What do you do with roast beef leftovers?

    This isn't a recipe post but It is important to note that the first step of cooking roast beef is to let it get up to room temperature. This helps it cook evenly. Do not skip this step.

    meatloaf and hash

    The answer to yesteredays "Whats Scratch's girlfriend cooking" was indeed meatloaf. A very veggie packed one at that. This morning I turned some of the left overs into a hash by adding potatoes, onions, bell peppers and topped it with a sunny side up egg.
